Spinach is often recognized as one of the functional foods for its nutritional, antioxidant and cancer-fighting constituents. Fresh leaves are rich in vitamins A & C, as well as flavonoid polyphenolic antioxidants such as lutein, zea-xanthan and beta-carotene. Very low in calories & fats, spinach also contains a good amount of soluble dietary fiber.
INGREDIENTS: 1 handful fresh baby spinach 1 cup plain yogurt 1 cup frozen mango chunks 1/3 English cucumber, cut into 1-inch chunks 1 cup orange juice 1-2 T fresh minced ginger, to taste Ice cubes, as needed
TO MAKE: Combine all ingredients in a blender; purée on high speed until smooth. Add a few ice cubes and blend until it reaches your desired consistency. Makes 2 servings.
